Ristorazione / The catering

Una cosa che invece è cresciuta in me con il passare del tempo, è il desiderio di sperimentare qualche “luogo sacro” della ristorazione.

Sicuramente l’epoca attuale mi è di grande supporto 😋, dato che molte celebrità sono state scoperte proprio fra i fornelli, la mia ricerca di stelle e gourmet ha trovato molta soddisfazione.

Conoscete la mia filosofia sulla qualità piuttosto che quantità, che esprimo in ogni ambito, così ogni tanto mi concedo qualche pasto luculliano.

A Milano ho appena scoperto un luogo magico, lontano dai riflettori, che si trova nel cuore di Isola. La loro filosofia è la seguente:

“Abbiamo bisogno di contadini,
di poeti, gente che sa fare il pane,
che ama gli alberi e riconosce il vento.
Più che l’anno della crescita,
ci vorrebbe l’anno dell’attenzione.
Attenzione a chi cade, al sole che nasce
e che muore, ai ragazzi che crescono,
attenzione anche a un semplice lampione, a un muro scrostato.

più che aggiungere, rallentare più che accelerare,

Time after time it’s growing on me the desire to taste some of the “sacred place” of catering.

Certainly the present time is a big support 😋, seeing many celebrities discovered in the kitchen, my research of stars and gourmet has been satisfied.

You know my philosophy about quality rather than quantity, that I express in every field, so sometimes I give myself a sort of lucullan meal.

I just discovered a magic restaurant in Milan, far away from spotlights, situated in Isola area. The philosophy of Chef is the following:

“We need farmers, poets,
people who could do bread,
love trees and recognize the wind.
It will be necessary the year of attention more than the year of growing.
Attention to who follows down and died,
to boys growing, attention also to a street lamp or a picked wall.
Today to be revolutionary means remove more than add,
slow down more than accelerate,
It means to value the silence , the light, the fragility and sweetness.”
